Holiday Don't-Call-it-Fruitcake

Ingredients

  • 1 cup vegetable oil
  • 2 cups sugar
  • 2 cups water
  • 3/4 cup raisins
  • 2/3 cup chopped dates
  • 2 teaspoons ground cinnamon
  • 1 teaspoon salt
  • 2 teaspoons baking soda dissolved in 3 tablespoons water
  • 4 cups flour
  • 1/2 cup maraschino cherries, quartered
  • 1/2 cup walnuts, chopped
  • Walnut halves or pieces for decoration
  • Maraschino cherry halves for decoration

Preparation

Step 1

Preheat oven to 350 degrees F. Grease and flour loaf pans.

Bring first 7 ingredients to a boil in a large saucepan and set aside to cool completely, about 1 hour. When mixture is cooled, stir in baking soda mixture. Whisk in flour one cup at a time, stirring until just incorporated. Stir in quartered cherries and chopped walnuts and pour into prepared pans. Top with cherry and walnut halves and bake for 35 to 45 minutes for mini loaves (50 minutes to 1 hour for full-sized loaf), or until top springs back to touch and toothpick inserted in center comes out clean.

Cool completely before removing from pan.
