Russian Tea Cakes

Ingredients

  • 1 cup butter, softened
  • 1/2 cup powdered sugar
  • 1 tsp.. pure vanilla extract
  • 2 1/4 cups flour
  • 1/4 tsp. salt
  • 3/4 cup finely chopped nuts( walnuts, almonds, pecans or hazelnuts)
  • Sifted Powdered sugar for rolling

Preparation

Step 1

1.Preheat oven to 375. Line two cookie sheets with Parchment paper.
2. In Standing mixer with paddle attachment, beat butter, 1/2 cup powdered sugar and vanilla until fluffy. Add flour and salt and mix until dough comes together. Stir in nuts. If dough is too soft, chill it until you can work it easily with your hands
3.Scoop I tbsp. balls of dough and place on prepared cookie sheets 1 1/2 inches apart
4.Bake cookies for 7-8 minutes until bottoms are just slightly brown. Remove from oven and cool for just a minute, until you can handle them.
Fill a small bowl with sifted powdered sugar. Roll each cookie in the sugar until coated. Place on a wire rack to cool.
5.Once cookies are cool , re-roll cookies in powdered sugar
6. Place in a airtight container with waxed paper between layers

NOTE: Grandpa liked these with the hazelnuts
