Ingredients
- 2 eggs
- 4 tablespoons unsalted butter, melted
- 1 teaspoon cinnamon
- 3/4 cup butternut squash, roasted and mashed
- 1/8 teaspoon nutmeg
- 2 tablespoons pure maple syrup
- 1 1/2 cups milk
- 2 cups self-rising flour

Whisk eggs, butter, cinnamon, squash, nutmeg, maple syrup and milk in a large bowl. Add flour and mix until batter is lumpy. Heat skillet and cover with non-stick spray. Pour 1/4 cup of batter on skillet and flip when batter begins to bubble. Cook until golden brown. Drizzle with maple syrup before serving.
