Ingredients
- 1/3 cup mixed, dried fruit – goji berries, sweet cherries, hunza raisins
- 1/4 cup fresh orange juice
- 1 tablespoon lemon juice

- 1/2 cup almonds
- 1/2 cup coconut flakes
- 1/4 cup cashews
- 1/2 cup pitted packed dates – chopped
- 1 teaspoon almond extract
- 1 teaspoon orange zest
- 1 teaspoon lemon zest
- 1/4 cup chopped pecans
- Coconut Glaze
- 2 tablespoons melted coconut creme
- 2 tablespoons melted coconut oil
- 1 tablespoon cashew butter
- 1/2 tablespoon maple syrup
Preparation
Step 1
Soak the dried fruit in the orange and lemon juice for 30- 60 minutes.Grind the almonds, coconut, and cashews to flour in a food processor. Add the dates, extract and zests. Process until the dates are incorporated. Add the soaked fruit along with 2-3 teaspoons of the soak liquid. Pulse briefly – just to incorporate without breaking down the fruit. Stir in the pecans. The dough should be moist but not wet. If it’s a bit too moist, let it chill in the fridge for 4-6 hours. Use a mini ice cream scoop to make balls. Chill in the freezer while making the glaze.
Coconut Glaze:
Whisk all ingredients together until smooth. Allow the mixture to sit at room temperature until it starts to thicken slightly. Spoon a little bit over the top of each chilled fruit cake. Top with a little bit of orange zest if desired.
