Sugar & Snow Peas with Caviar Dipping Sauce

Ingredients

  • 2 lbs. of snow peas and sugar peas (half and half)
  • 1 2 oz. red caviar
  • 8 oz. cream cheese
  • 1 cup sour cream
  • juice of half a lemon
  • 1-1/2 cup finely chopped radishes
  • 2 shallots finely chopped

Preparation

Step 1

In medium bowl mix together cream cheese, sour cream and lemon juice until smooth.

Stir in finely chopped radishes and shallots.

Add caviar and salt and pepper to taste.

Store in a small serving bowl in refrigerator for at least 4 hours so flavors will blend.

Blanche sugar and snap peas for 1 minute, drain and place on platter.

Serve with sauce, and garnish with sliced radishes
