Zucchini Crust Pizza

By

This is another zone recipe!! I'm not exactly sure of the breakdown of carbs & protein but it was posted on the zone diet website by a person who has been zoning a very long time & gives out great advice. With that in mind, she says it serves 4 people so I think it is probably going to make 4 - 3 block servings.

We don't have this very often since it uses wheat flour which is an unfavorable carb on the zone diet but when we do, we enjoy it immensely!! It is a wonderful way to have "pizza".

Preparation

Step 1

Place shredded zucchini in a colander, sprinkle with salt, mix in, leave for 15 minutes. Squeeze out water.

Mix all crust ingredients together and spread on pizza stone or 12 inch prepared pizza pan. Bake about 20 minutes or until top is dry to the touch and beginning to brown. NOTE: we bake this for about 30 minutes to try and get the crust a little crisper.

Remove from oven and add toppings in the order listed. Return to oven and bake until cheese is melted.

Have 1 block of fruit with meal.
