Peanut Butter Rice Krispy Treat Cookies

Ingredients

  • 2 1/4 cups all purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup butter, at room temperature
  • 1/2 cup peanut butter
  • 1/2 cup sugar
  • 3/4 cups brown sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 3.4 ounce pkg vanilla instant pudding mix
  • 1 1/2 cups miniature marshmallows
  • 1 cup mini semi sweet chocolate chips
  • 2 cups Rice Krispy Cereal

In a medium bowl whisk together the flour, baking soda and salt. Set aside. Using a mixer, cream the butter, peanut butter and sugars. Add the eggs and vanilla and mix until creamy. Add the vanilla pudding mix. Slowly add the flour mixture and mix just until combined. Add the marshmallows and chocolate chips. Stir in the cereal by hand. Scoop onto a baking sheet lined with parchment paper (this is very important or you will never get the melted marshmallows off of your pan). Bake at 350 degrees for about 10-12 minutes or until lightly golden. Do NOT overbake. Best when warm.
