Pork Chops with Apples

Juicy apples and cinnamons pair perfectly with pork and make an excellent winter meal. Serve with noodles or rice, and steamed broccoli.

Ingredients

  • 1 lb boneless thinly sliced pork chops
  • 3 Tbls olive oil
  • 1 large apple, peeled and cubed
  • 1 cup apple juice plus 2 Tbls apple juice
  • 1/3 cup raisins
  • 3 Tbls brown sugar
  • 1 Tbls freshly squeezed lemon juice
  • 1/2 tsp salt
  • 1/4 tsp ground cinnamon
  • 1 Tbls cornstarch
  • 1/4 cup walnuts, toasted and coarsely chopped.

Preparation

Step 1

Trim meat of any fat. Heat oil in large nonstick skillet over medium heat. Add pork and cook 2 minutes per side, until meat truns golden brown. Add apple, 1 cup of the juice, raisins, brown sugar, lemon juice, salt, and cinnamon; stir to combine.

Bring to boil; reduce heat, and simmer covered, until apples are tender, 10 to 15 minutes.

In a small bowl, blend cornstarch with 2 Tbls apple juice; stir to blend. Add to skillet, and simmer, stirring, 2 to 3 minutes until thickened. Stir in walnuts and serve.
