- 1 batch of basic sugar cookie dough
- 2 tsp unsweetened cocoa powder
- 1 tsp red food coloring

Prep 1 batch of basic sugar cookie dough and transfer all but 3/4 cup of dough to a piece of lightly floured parchment; shape into a 10 inch square and chill for 20 mins.
add 2 tsp unsweetened cocoa powder and 1 tsp red food coloring to the reserved dough and mix until bright red. Shape the red dough into a rectangle, pressing by hand. Place dough between two sheets of waxed paper; roll to a 10 inch square. REmove the top piece of waxed paper, and invert the red dough onto plain dough. Discard waxed paper. Roll dough to an even thickness, then tightly roll into a cylinder. spread 1/4 cup course red sanding sugar on a baking sheet. Roll the cylinder in the sugar until coated. Wrap in plastic wrap and freeze until very firm about 30mins. Slice the dough into 1/4 inch thick rounds and bake as directed, 12 to 14 mins
