Minted Lamb Kabobs with Pita
For variety, add chopped cucumbers, peppers and other fresh vegetables to the sandwiches before serving.

Ingredients
- 1 1/2 pounds trimmed boneless leg of lamb, cut into 3/4" cubes
- Salt (optional)
- Freshly ground black pepper
- 1 1/2 cups plain low-fat yogurt
- 1/2 cup chopped fresh mint
- 1/4 cup finely minced red onions
- 4 large pita breads
- 1 cup diced tomatoes
Preparation
Step 1
Preheat the grill or the broiler.
Sprinkle the lamb with the salt (if using) and pepper. Thread onto metal skewers, leaving space between the cubes. Grill or broil about 5: from the heat, turning once, for 10 minutes, or until cooked through. Remove the lamb from the skewers. In a small bowl, mix the yogurt, mint and onions.
Stack the pitas, wrap them loosely in plastic wrap and microwave on high power for 1 minute. Serve topped with the lamb and tomatoes. Drizzle with the yogurt sauce.
