  • 6

    oz dried tart cherries

  • 1

    C Madeira or sherry

  • 14

slices (8 C) day-old bread, toasted and torn into small pieces

  • C toasted pecan pieces

  • 1

    C onion, finely chopped

  • 1

    C celery, finely chopped

  • ½

    C shallots, finely chopped

  • ½

    C (1 stick) margarine

  • 3

    apples, coarsely chopped

  • ½

    C golden raisins

  • ½

    C parsley, finely chopped

  • 2

    t dried tarragon

  • 1

    t dried thyme

  • 10-12

    dried sage leaves, crumbled

  • Salt & pepper to taste

In a small bowl let cherries soak in Madeira for several hours or overnight. In a large bowl combine the bread pieces with the pecans. Drain cherries, reserving Madeira and add them to the bread mixture. In a skillet saute the onion, celery and shallots in the margarine until vegetables are softened and add them to the bread mixture. Add the apples, raisins, parsley, tarragon, thyme, sage, salt, pepper and reserved madeira and toss the stuffing well. Yeilds enough stuffing for an 18 lb turkey.
