Blueberry Muffins

Ingredients

  • 1 3/4 cups flour
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/4 cup butter, softened
  • 1/2 cup sugar
  • 1 egg
  • 3/4 cup milk
  • 1 tsp vanilla
  • 1 cup blueberries, fresh or frozen
  • 1 tbsp flour

Preparation

Step 1

Preheat oven to 400. In a large bowl combine flour baking powder and salt. Stir thoroughly and make a well in the center. In another bowl cream butter and sugar. Beat in egg until quite smooth. Mix in milk and vanilla. Pour into center of well. Stir just to moisten. batter will be lumpy. In small bowl gently stir blueberries with flour. Fold into batter. Fill muffin tins and bake for 25 minutes.
