Chimi Churri Sauce

We first encountered Chimi Churri at a Brazilian Grill called Samba in The Mirage in Las Vegas. It’s excellent for dipping bread, as a marinade or sauce for any grilled meat. My favorite is on steak, portabella, and onion fajitas.

Ingredients
- 1 bunch parsley
- 1/2 bunch cilantro
- 4 green onions
- 3 cloves garlic
- 2 T thyme, stemmed
- 1 tsp salt
- 1 tsp freshly gound pepper
- 1/2 tsp cumin
- 1/2 tsp crushed red pepper
- 2 T lemon juice
- 1 T lime juice
- 1/2 to 1 cup olive oil

Step 1
Roughly chop parsley, cilantro, onions and garlic. Blend all in food processor or nut chopper, adding enough olive oil to get sauce-y consistency. Refrigerate in airtight container for at least 1 hour before using to fuse flavors.
