Ingredients

  • Caramel Sauce:
  • 1 fresh pear, peeled, chopped & mashed
  • 1/2 c applesauce
  • 1 c white sugar
  • 3/4 c packed brown sugar
  • 1/2 c chopped pecans
  • 1 c veg oil
  • 2 eggs
  • 3 c all-purpose flour
  • 1/2 t salt
  • 2 t baking soda
  • 1 t rum extract
  • 1/2 c whipping cream or heavy cream
  • 1/2 c butter
  • 1/2 c dark brown sugar
  • 1/2 c sugar
  • 3 T rum or 1 t rum extract

Preparation

Step 1

Preheat oven to 350˚
Grease & flour pan & set aside
In large bowl, combine all cake ingredients, blend 2 minutes on med speed, scraping bowl often
Pour batter into prepared pan
Bake 40-45 min, until toothpick inserted comes out clean
Cool 10 min in pan; invert onto cooling rack
Caramel Sauce:
Combine all sauce ingredients in heavy saucepan
Bring to boil over med heat, whisking occasionally
Cover & continue to boil for 1 min.
Uncover & boil for 3 to 4 more minutes without stirring
Cool slightly before drizzling over warm cake.
Serve cake warm or cooled with seasonal fruit & whipped cream
