Ingredients

  • 1

    c. all-purpose flour

  • 1/3

    c. plus 1 Tbsp. confectioners' sugar

  • 1/2

    c. butter

  • 4

    large eggs

  • 3/4

    c. granulated sugar

  • 1/2

    c. thawed frozen bottled lemon juice from concentrate.

Directions

1. Mix flour and 1/3 c. confectioners' sugar in a medium-size bowl. Cut in butter until mixture resemples small peas. Mixture will be dry and crumbly. Press in bottom of ungrased 9-inch square baking pan. Bake in preheated 350 oven 15 minutes or until lightly golden. 2. Beat eggs at high speed in a medium-size bowl about 3 minutes until pale and thickened. Gradually add granulated sugar and continue beating 1 minute longer or until mixture is thick. Stir in lemon juice. 3. Pour into hot crust; bake 15 minutes or until golden and pick inserted in cener comes out clean. 4. Sprinkle with remaining confectioners' sugar. Cool in pan on rack. Cut into 4 x 1 inch bars.
