Pasta Fagioli

Ingredients

  • 2-3 tablespoons Olive Oil
  • 4-5 cloves garlic, minced
  • 1 medium onion, chopped
  • 1 can beef broth
  • 1 can stewed tomatoes
  • 1 can cannelloni beans, drained and washed
  • 1 cup ditalini pasta
  • Parmesan or Romano Cheese
  • Olive Oil

Preparation

Step 1

Microwave garlic and oil for 1 minute or until clear and soft (not crisp). Cook pasta and set aside,

Pour olive oil into pan and saute onion until translucent. Add tomatoes, beef broth and garlic. Simmer for a few minutes. Add beans, ditalini pasta and 2-3 tablespoons of cheese. Simmer a few minutes longer. Serve with additional cheese.
