Meat Loaf Cups

Ingredients

  • 2 eggs, beaten
  • 1/4 cup milk
  • 1/4 cup ketchup
  • 1/2 cup crushed cornflakes
  • 4 T. dried minced onion
  • 1 t. prepared mustard
  • 1 t. salt
  • 1/4 t. pepper
  • 2 lbs. lean ground beef
  • additional ketchup, optional

Preparation

Step 1

In a large bowl, combine the first eight ingredients. Crumble beef over mixture and mix well. Press into 12 foil-lined or greased muffin tin cups. Bake at 350 degrees for 25 minutes or until the meat is no longer pink. Drain before serving. Drizzle with additional ketchup, if desired.
