Taco Salad

Ingredients

  • MEAT:
  • 1 lb lean ground beef
  • 4 cloves garlic, minced
  • 1 (15 oz) can black beans, drained & rinsed
  • 1 package Taco seasoning mix
  • water (per Taco seasoning instructions)
  • DRESSING:
  • 4 medium tomatoes
  • 2 tablespoons olive oil
  • 1 lime
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • SALAD:
  • 1 head iceberg lettuce
  • 1/2 cup grated Cheddar cheese
  • tortilla chips
  • 1/2 yellow onion, diced
  • sour cream (optional)

Preparation

Step 1

1. To make the tomato dressing, in a medium bowl, combine diced tomatoes (with their juices), oil, lime juice, salt and pepper. Stir well then set aside.

2. Brown ground beef in a large skillet over medium-high heat until no longer pink.

3. Add the garlic and beans and cook for 2 minutes more. Add the Taco seasoning and water and stir. Once the seasoning is absorbed into the meat, lower heat to simmer.

4. Place 2 cups of lettuce on a plate. Sprinkle on diced onions, then top each serving with 1 cup of the beef mixture. Sprinkle 2 tablespoons of cheese on top of the meat.

5. Right before eating, pour a portion of the tomato mixture, with the liquid, on top of each salad. Optionally, crushed tortilla chips may be sprinkled over the entire salad. Finally, top the salad with a dollop of sour cream.
