Ingredients

  • 1 1/4 c. pecan halves
  • 3/4 c. Splenda
  • 2 Egg Whites, at room temp
  • 1/8 tsp. salt
  • 3/4 tsp vanilla extract
  • Garnish: 24 pecan halves

Preparation

Step 1

1. Heat overn to 350. Line a large baking sheet with aluminum foil.
2. Place the 1 1/4 c. of pecan halves and 1/4 c. of the Splenda in the work bowl of a food processor. Process until pecans are finely ground. Set aside.
3. Place egg whites in a clean large bowl. Add salt and beat on medium-high speed until solf peaks form. Add remaining 1/2 c. Splenda, one tablespoon at a time, while beating. Add vanilla and continue to beat until stiff glossy peaks form. Gently fold in the ground nut mixture.
4. Dollup mixture onto prepared baking sheet to form 24 cookies (about 1 rounded Tbsp each). Place pecan half on top of each cookie.
5. Bake for 15 minutes. Remove cookies to cooking rack and allow to cool completely.
