West African Chicken Soup

Ingredients

  • 3 cups diced cooked chicken
  • 1 diced onion
  • 3 large cloves minced garlic
  • 2 T dark sesame oil
  • 1 1/2 tsp curry powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp crushed red pepper flakes
  • 4-5 cups chicken broth
  • 1 can tomato paste
  • 1 can Rotel tomatoes with juice
  • 3 T chunky peanut butter (I use almond butter)

Preparation

Step 1

In a large pot, saute chicken, onion and garlic in sesame oil for about 10 minutes. Add curry powder, salt, pepper and red pepper flakes and saute 1 minute more.

Add the chicken broth, tomato paste, tomatoes and peanut/almond butter, stirring until well combined. Heat until very hot but not boiling.

Serve immediately over brown rice.
