Ingredients
- 4 sweet potatoes or yams, scrubbed and dried and baked
- 2/3 cup packed golden brown sugar
- 1/3 cup milk
- 1/3 cup buttermilk
- 1/4 t. salt
- 4 T. butter
- fresh black pepper to taste
- 1/2 cup mini marshmallows
Preparation
Step 1
Preheat oven to 400 degrees. Slice each cooked potato in half lengthwise and scoop flesh into a blender or food processor leaving 1/4 inch border of flesh to support potato skin. Puree scooped out flesh along with salt and pepper until smooth. Gradually add both milks until combined. Stop machine and add butter and brown sugar and process until smooth. Wait for potatoes and filling to return to room temp. Spoon puree back into shells and just before baking press marshmallows into potatoes. Bake until marshmallows are golden and potatoes are hot, 10-12 minutes.
