Ingredients
- 3-1/2 ounces long grain Rice
- 4 teaspoons canola oil
- 3/4 pound med shrimp
- 1-1 /2 teaspoons creole seasoning
- 1/8 teaspoon ground red pepper
- 1 cup chopped onion
- 1/2 cup chopped red pepper
- 1/2 celery chopped
- 4 garlic cloves minced
- 1 cup low fat milk
- 1 tablespoon flour
- 2 cups cherry tomatoes quartered
- 1 /4 teaspoon ground blk pepper
- 2 tablespoons minced fresh chives
- 1 tablespoon fresh thyme

Preparation
Step 1
cook rice
heat skillet w/ oil
sprinkle shrimp w/ creole and red pepper
add shrimp to pan cook 3 mins
remove from pan
add oil
add onion pepper celery thyme
garlic cook 5 mins
add milk and flour to mixture
bring to simmer
cook 3 mins
to thick
add tomatoes and blk pepper
cook 2 mins
stir in shrimp sprinkle with chives
