Sausage Frittata

Ingredients

  • 1 sm. med. green, red or yellow pepper, chopped
  • 1 Tbs. olive oil
  • 4 scallions, chopped
  • 8 breakfast sausages, cooked and sliced into 2 in. pieces
  • 1/2 tsp. freshly ground pepper
  • 1/2 tsp. red chilies. crushed
  • 8 eggs
  • 4 oz. double cream
  • 4 oz. cheddar cheese, grated

Preparation

Step 1

Preheat oven to 350 degrees. In an ovenproof frying pan, saute the peppers in olive oil until al dente. Add scallions and cooked sausage slices. Add ground pepper and chilies. Whisk together eggs and cream and pour evenly into pan. Cook on low heat for two min. or until the eggs begin to set. Sprinkle cheese over top and put in middle of oven for 10 to 15 min. until the top is puffed and golden. Cut into wedges and serve.
