Dave's slow cooker pasta fagioli soup


recipe calls for one can kidney and one can cannellini beans
I dont like kidney so I use all cannellini

  • 1 pound ground beef
  • 1 small onion diced
  • 2 carrots finely diced
  • 2 celery stalks finely diced
  • 1 can diced tomatoes undrained
  • 2 cans cannellini beans drained and rinsed
  • 3 c beef stock or more if needed
  • 1 jar spaghetti sauce
  • 2 t each dried oregano and parsley
  • 1 t ground black pepper
  • 1/2 t kosher salt
  • 1 c ditalini pasta



Step 1

brown and crumble beef and drain excess grease
add beef and all other ingredients except pasta to slow cooker
stir to combine
cook on low 6-8 hours or high 4-5 hours
during last 30 minutes stir in pasta
if you want it soupier you can add more beef broth at any time
