Ingredients

  • Muffin:
  • 2 eggs
  • 1/2 cup sugar
  • 1/2 cup Canola Oil
  • 1/4 cup water
  • 1 tsp vanilla
  • 1 1/2 cups flour
  • 1 tsp baking powder
  • 1 cup blueberries
  • Crumbles:
  • 3 tbl flour
  • 3 tbl brown sugar
  • 1/4 tsp cinnamon
  • 2 tbl unsalted butter

Preparation

Step 1

Preheat oven to 400 and place muffin foils in muffin pan
Beat eggs, in a large bowl. Add sugar, oil, and water, mix well. Add vanilla.
In a separate bowl, combine with flour and baking powder.
Stir flour mixture into egg mixture. Fold in berries.
Fill cups 3/4 full.
Mix crumble topping with fork.
Coat top of each muffin
Bake in preheated oven for 20 minutes ( until lightly brown).
