Broccoli & Cheese Quiche

This recipe goes over really well at a gathering. It is a finger food. takes only 45 minutes and 15 for prep. 6-8 servings.

Ingredients

  • 1 (1#) bag of frozen cut up Broccoli
  • 1 (8 ounce) piece Mozzarella Cheese or 8 slices or 8 oz. Shredded Cheese
  • 5 Eggs
  • 1 Onion (medium size) (diced into small pieces)
  • Salt and Pepper to taste
  • 1 frozen deep dish Pie Shell
  • Grated Parmesan Cheese

Preparation

Step 1

1. Thaw Broccoli in Microwave for 2 minutes. Place in a large bowl. Make sure the liquid that drains from the frozen Broccoli is drained off. You can use paper towels to dry the Broccoli.

2. Cut up Cheese in little cubes.

3. Beat Eggs until frothy. Add the Broccoli, Cheese, Onion, Salt & Pepper to the bowl with the Eggs.

4. Pour into Pie Shell

5. Sprinkle Parmesan Cheese on top (or Mozzarella, or Cheddar Cheese) of the Quiche. I personally like a combination of Cheeses.

6. Bake at 350 degrees for about 30 to 40 minutes, or until top is golden brown.
