Red Velvet Cake

Ingredients

  • Cake:
  • 1/2 cup Crisco
  • 2 unbeaten eggs
  • 1/2 tsp salt
  • 1 tsp vanilla
  • 2 oz red food coloring
  • 1 tsp baking soda
  • 1 1/2 cups sugar
  • 2 1/4 cups sifted cake flour
  • 1 cup buttermilk
  • 2 Tbs cocoa
  • 1 Tbs vinegar
  • Frosting:
  • 4 1/2 level T. flour
  • 1/4 tsp salt
  • 1 1/2 c. milk
  • 1 1/2 c. butter
  • 1 1/2 c. sugar
  • 3/8 tsp. vanilla

Preparation

Step 1

1 Prepare 2 round cake pans by greasing and flouring them, then placing wax paper on bottom of pan.
2 Cream together Crisco and sugar. When adding following ingredients, stir only enough to mix into batter - do not over stir!
3 Add unbeaten eggs. Sift together cake flour and salt. Add alternatively with buttermilk. Add 1 ts. vanilla. Mix cocoa with food coloring - then add to mix. Add 1 T. vinegar with soda; add to mix.
4 Bake at 350° for 30 minutes.

Frosting:
Mix 4 1/2 level T. flour, 1/4 tsp salt and 1 1/2 c. milk together. Cook, stirring constantly until thick over medium heat. Set aside to cool. Cream together 1 1/2 c. butter and 1 1/2 c. sugar. Add butter/sugar mixture slowly to flour mixture a little at a time. Beat until fluffy. Add 3/8 tsp. vanilla.
