Ingredients

  • 2 1/2 c (6 large) apples, peeled, cored, and sliced to 1/4 inch thick
  • 1/4 c white sugar
  • 1/4 c light brown sugar
  • 1 Tablespoon lemon juice
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/4 teaspoon nutmeg
  • 2 Tablespoon butter
  • 1 1/2 Tablespoon cornstarch
  • unbaked pie crust

Preparation

Step 1

1. Combine sliced apples with sugars, lemon juice, cinnamon, nutmeg, and salt. Let sit for 30 minutes to 3 hours.
2. Place apples and their juices in their strainer placed over a large bowl. Let apples drain for 15-30 minutes.
3. Spray a 4 cup measuring cup with nonstick vegetable spray and pour juices and 2 tablespoons of butter. Place in microwave and boil the liquid on high 5-7 minutes until it is 1/3 cup.
4. Transfer drained apple slices to a large bowl, mix with cornstarch. Pour reduced syrup over apples and toss to combine.
5. Pour apples and syrup into pie crust. Moisten the edges of the pie crust with water and place top crust over the apple. Tuck any excess pastry under the bottom crust. Make 5 two inch slits from center of pie. Chill.
6. Preheat oven to 425 degrees. Place baking sheet in an oven with foil. Bake 45-50 minutes.
