Boss Nass Broccoli

  • 1 head fresh broccoli
  • 1/4 cup shredded parmesan
  • 1 cup cubed American cheese
  • 1/2 cup milk
  • 1/2 cup smoky barbecue sauce in a squeeze bottle

Step 1

1. Using a vegetable steamer insert, seam the whole broccoli head in a stockpot until tender, 6 to 8 minutes.
2. To make Boss Nass’s crown, sprinkle the parmesan into an 8-inch nonstick sauté pan. Form the parmesan into a triangle in the pan, making sure the cheese is spread evenly. Place the pan over medium heat and allow the parmesan to cook and melt. When the cheese is bubbly and starts to brown on the underside, remove pan from heat. Slide the parmesan crisp onto a work surface. Carefully mold the triangle into a cone shape by rolling one side of the triangle to meet another side. Don’t burn yourself! Press the seam with your fingers and hold in place until the parmesan crisp hardens and holds its shape.
3. In a saucepan or a bowl in the microwave, heat and stir the cubed American cheese and milk together until the cheese is melted and the sauce is smooth.
4. Place the steamed broccoli on a plate. Spoon the cheese sauce around the broccoli and place the parmesan crown on top of it. Squeeze swirls of the barbecue sauce onto the cheese sauce to look like Boss Nass’ coat and draw the indentations in his crown.
