Ingredients

  • 1 to 1 1/2 lbs. ground beef
  • 1 to 1 1/2 lbs. ground pork
  • 1 1/2 lbs. beef chunks (stew meat) or sirloin cut into bite-sized pieces
  • 1 sweet onion,chopped
  • 1 red bell pepper,chopped
  • 1 yellow bell pepper,chopped
  • 1 garlic clove (peeled and pressed or chopped finely)
  • 1 27 oz. can tomato sauce
  • 1 8 oz. can tomato sauce
  • 2 tsp. cumin (or to taste)
  • Salt and pepper to taste
  • 1/2 to 3/4 cup brown sugar
  • Worcestershire sauce to taste
  • 1/2 cup honey
  • 1/2 cup water
  • 2 tbsp. butter
  • 2 tbsp. olive oil
  • Pepsi (to taste and for desired consistency)
  • 2 cans black beans,rinsed and drained
  • 2 cans kidney beans,rinsed and drained
  • 3 cans chili beans
  • Sour cream (for garnish)
  • Cheddar cheese (for garnish)
  • Tortilla chips (for garnish)

Preparation

Step 1

Place beef pieces in 13"X 9" baking pan and cover halfway with Pepsi. Cover with foil and bake for 2 hours at 225 deg. or until meat is tender. It will become more tender when added to bean mixture.

FOR THE SAUCE:

In a fry pan, drizzle olive oil and melt butter. Add onions, peppers and garlic. Saute 15 minutes on medium heat or until vegetables are soft. In a small bowl combine water,8-oz. can of tomato sauce,cumin,Worcestershire sauce,brown sugar,honey and a few splashes of Pepsi (about 1/4 cup). You may want to add more honey or brown sugar depending on your taste. Whisk together and then pour over pepper/onion mixture. Bring to a boil,then reduce heat and simmer for 15 minutes.
Put all the beans and the large can of tomato sauce in a large pot on the stove-top or in an electric roaster, set to low. (You may need to add more beans,depending on what ratio of beans to meat you like).
In a saucepan,brown the pork and ground beef (leaving meat in whichever consistency you like best),and add cumin and salt and pepper. Drain fat from meat and add meat to bean mixture.
Stir and simmer until the meat is cooked through. Add remaining meat pieces to the beans,and stir.
As the chili simmers (several hours),add about 1/2 cup Pepsi periodically. Pepsi may be added to reach the desired consistency and taste. Ladle chili into bowls and serve with a dollop of sour cream,shredded cheese and tortilla chips to top. Freeze any leftovers.
