WARM LOBSTER DIP

Ingredients
- 2 tbsp butter
- 1 small leek
- 2 minced garlic cloves
- 2 tbsp flour
- 1/2 cup whipping cream
- 1/3 cup milk
- 1/4 tsp smoked paprika
- 1/4 tsp salt
- pinch of cayenne pepper
- pinch of black pepper
- 1/2 cup shredded gruyere
- 450 grams steamed lobster meat
- 2 tbsp lemon juice
- 1 tbsp dry sherry
Preparation
Step 1
Over medium heat melt butter and cook leek and garlic stirring often till leak is softened. Stir in flour cook for 2 minutes.
Whisk in cream, milk, paprika, salt, pepper and black pepper, bring to a boil and whisking often. Reduce heat till thickened. Stir in lobster, half of the gruyere, lemon juice and sherry - cook till heated through.
Scrape into a 2 cup baking dish. Sprinkle with remaining Gruyere. Broil till bubbly (about 4 minutes) Let stand for 5 minutes.
