Ingredients
- Cake:
- 2 cups sugar
- 4 eggs
- 1 tsp cinnamon
- 2 tsp soda
- 1/2 cup chopped pecans
- 1 1/2 cups vegetable oil
- 2 cups flour
- 1 tsp salt
- 3 cups grated carrots
- Icing:
- 4 oz cream cheese
- 2 T. butter
- 8 ounces powdered sugar
- 1 tsp vanilla
Preparation
Step 1
Beat together sugar, oil and eggs.
Sift together flour, cinnamon, salt and soda. Add to sugar/egg mixture.
Add in carrots and pecans.
Place in either greased 2 round pans or 9" x 13" pan. Bake at 325° for 50 minutes.
Cream Cheese Icing:
Mix 4 oz. cream cheese, 1/8 c. butter, 1/2 lbs. powdered sugar and 1 tsp. vanilla together.
