Angel Food Cake

Sifting the flour multiple times makes this light ultra light and fluffy.

Ingredients

  • 1 1/4 cups cake flour
  • 1/2 cup sugar
  • 1 1/2 cups egg whites (about 12) - room temperature
  • 1 1/4 tsp cream of tartar
  • 1/4 tsp salt
  • 1 tsp vanilla
  • 1/4 tsp almond extract
  • 1 1/3 cups sugar

Preparation

Step 1

1 Measure sifted flour, add 1/2 c. sugar and sift four times. Combine egg whites, cream of tartar, salt and flavorings in large bowl. Beat at high speed until moist soft peaks form. Add rest of sugar in 4 additions, beating until blended after each addition. Sift in flour mixture in 2 additions, folding in with large spoon. Turn bowl often.
2 Pour into ungreased 10" tube pan; bake at 375° for 35 to 40 minutes. Cool cake upside down in pan on cake rack, then loosen from sides and remove.
3 Optional Chocolate Sauce: Whip 1 pint whipping cream, then add 1/5 can chocolate syrup and 1 tsp. dry cocoa. Split cake in 3 ways, spread mixture between layers and on top and around sides of cake.
