Ingredients

  • 1 chuck roast trimmed and cut into chunks
  • 4 large carrots sliced into rounds
  • 3 zucchinis sliced into rounds
  • 4 celery ribs sliced
  • 1 onion large dice
  • 1 bouquet garni thyme, parsley, bay leaf, black peppercorns
  • salt ant pepper to taste
  • 1 head of cabbage roughly chopped
  • 4 medium russet potatos large dice
  • 4-5 qts. beef stock
  • 1/2 cup tomato sauce

Preparation

Step 1

. season and brown meat

. combine all ingredients except cabbage, potato, and zucchini in a stockpot and cover with stock

. simmer for and hour, add potatoes, simmer for another 30 minutes, add in the cabbage and zucchini, taste and adjust seasoning
