Ingredients
- 1 chuck roast trimmed and cut into chunks
- 4 large carrots sliced into rounds
- 3 zucchinis sliced into rounds
- 4 celery ribs sliced
- 1 onion large dice
- 1 bouquet garni thyme, parsley, bay leaf, black peppercorns
- salt ant pepper to taste
- 1 head of cabbage roughly chopped
- 4 medium russet potatos large dice
- 4-5 qts. beef stock
- 1/2 cup tomato sauce

Preparation
Step 1
. season and brown meat
. combine all ingredients except cabbage, potato, and zucchini in a stockpot and cover with stock
. simmer for and hour, add potatoes, simmer for another 30 minutes, add in the cabbage and zucchini, taste and adjust seasoning
