    chuck roast trimmed and cut into chunks

    zucchinis sliced into rounds

    bouquet garni thyme, parsley, bay leaf, black peppercorns

  • salt ant pepper to taste

    head of cabbage roughly chopped

    medium russet potatos large dice

    qts. beef stock

  • 1/2

    cup tomato sauce

Directions

. season and brown meat . combine all ingredients except cabbage, potato, and zucchini in a stockpot and cover with stock . simmer for and hour, add potatoes, simmer for another 30 minutes, add in the cabbage and zucchini, taste and adjust seasoning
