Ingredients
- 4 cups low sodium vegetable broth
- 2 cups quinoa
- 1/4 cup olive oil
- 1 3/4 lb butternut squash,peeled,seeded and diced
- 2 small zucchini,cut into 1"cubes
- 1 bunch scallions,chopped
- 1 cup diced dried apricots
- 1 cup craisins
- 1 cup chopped fresh parsley
- 1 lime,juice

Preparation
Step 1
Bring broth to a boil,reduce heat to low and stir in quinoa. Cover pan and simmer until quinoa absorbs liquid,10-15 min, Remove from heat
Heat oil in a large skillet over med heat. cook both squashes until slightly browned and tender,about 10 min.
stir in quinoa and gently mix in scallions,apricots,craisins and parsley . Drizzle with lime juice to taste.
This is best made on a stove top,it would turn into mush if cooked inside a bird. .
