Lemon-Pepper Polenta

Ingredients

  • 2 C milk
  • 1 C water
  • 1/2 C yellow cornmeal
  • 2 tsp minced lemon zest
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • 3 oz cream cheese, cubed

Preparation

Step 1

boil milk & water in lg. saucepan
whisk in cornmeal, S & P
reduce heat to simmer

cook polenta until thickened
5 min, whisking occasionally

stir in cream cheese until melted
