Mediterranean Tuna Salad with Olive Dressing

Ingredients

  • 1 lb. tiny new potatoes, halved if large
  • 1 lb. thin green beans, stem ends trimmed
  • 1/2 cup pmiento-stuffed green olives
  • 3 T olive oil
  • 1 T spicy brown mustard
  • 1 T lemon juice
  • 1 tsp. sugar
  • 1 12 o. can solid white albacore, tuna, drained and broken into large chunks
  • flat leaf Italian parsley

Preparation

Step 1

1. Place potatoes in a 4 qt. Dutch oven; add water to cover. Bring to boiling; reduce heat. Cover; simmer 5 min. Add beans; return to boiling. Cover; simmer 5 min. more or until potatoes and beans are just tender. Drain well.

2. Meanwhile, for Olive Dressing, place olives, oil, mustard, lemon juice, sugar and 1/2 tsp. pepper in a blender. Blend until smooth.

3.Drizzle Olive Dressing over potatoes, green beans and tuna. Sprinklw with flat leaf Italian parsley and additional olives. Serve with lemon wedges if desired.
