This frosting is courtesy of joyofbaking and can be used in plain, chocolate, raspberry or strawberry incarnations. It makes 2 cups, which is usually enough for a small cake.

Ingredients

  • FOR CHOCOLATE:
  • 1 cup heavy whipping cream
  • 1/2 tsp vanilla
  • 1 Tbsp white sugar
  • Add 1 1/2 Tbsp cocoa powder
  • 1 1/2 additional Tbsp white sugar
  • FOR RASPBERRY:
  • Add 1/2 cup lightly sweetened raspberry puree
  • FOR STRAWBERRY:
  • Add 1/2 cup lightly sweetened strawberry puree

Preparation

Step 1

1. In a large mixing bowl place the whipping cream, vanilla, and sugar.
2. Stir to combine
3. Cover and chill bowl and beaters for at least 30 minutes.
4. When chilled, beat mixture until stiff peaks form.
5. FOR CHOCOLATE: Add cocoa powder and additional sugar to above mixture and chill at least 1 hour so cocoa has time to dissolve. Beat to stiff peaks.
6. FOR RASPBERRY: Make whipped cream and add puree
7. FOR STRAWBERRY: Make the cream and add puree
