Ingredients

  • Stuffing:
  • Onion, raisins, apple, carrot, orange.
  • Cut up and mix with a bit of spices.
  • Basting:
  • 1/2 tsp. cinnamon
  • 1/2 tsp. ginger
  • 1/4 tsp. nutmeg
  • 1/4 tsp. white pepper
  • 1/8 tsp. ground cloves
  • Use this to mix with stuffing - 1 tsp..
  • Add:
  • 1 tbsp. soy sauce
  • Use this for initial rub/basting
  • Add:
  • 1 tbsp. more of soy sauce
  • 3 tbsp. orange marmalade or honey
  • Use this as basting during cooking.

Preparation

Step 1

Heat oven to 350. Take innards out. Rinse, dry duck. Pick skin with fork - try not to puncture meat in the process. Stuff with stuffing mix.
Place duck in roasting pan with raised grate under it. Roast for about 2 hours until internal temp is 165. Baste frequently.
