MAPLE-WALNUT ROASTED APPLES

  • 1/3 cup maple syrup
  • 3 tablespoons apple cider or apple juice
  • 2 teaspoons unsalted butter
  • 2 large apples, halved
  • 2 tablespoons chopped walnuts
  • 1 cup reduced-fat ice cream or low-fat vanilla frozen yogurt

Preparation

Step 1

1. Preheat the oven to 400°F (200°C). Coat an 8-inch (20-centimeter) square baking dish with nonstick spray.

2. Combine the maple syrup, apple cider, and butter in a small saucepan. Bring to a simmer, stirring. Remove from the heat.

3.Wash and dry the apple halves (leave the skin on) and remove cores. Place the apples cut side up, in the baking dish. Pour the maple syrup mixture over apples. Cover with aluminum foil and bake for 20 minutes.

4. Baste the apples with the maple syrup mixture. Sprinkle with the walnuts. Return to the oven and bake, uncovered, until the apples are tender and glazed, 10 to 20 minutes, basting once or twice.

Let cool slightly. Place an apple half on each dessert dish and drizzle with syrup.

Serve with a scoop of vanilla ice cream (or frozen yogurt).
