Mini Pineapple Lime upside down cakes

Baked in muffin pan… delicious with touch of lime. Use part of ring of canned pineapple and maraschino cherry for center garnish.

Ingredients
- 6 T brown sugar
- 8 pineapple rings
- 1 C flour
- 1/2 C sugar
- 1/2 t baking soda
- 1/4 t baking powder
- 1/4 t salt
- 2/3 C buttermilk
- 1/4 C melted butter
- 2-3 t lime zest from 1 lime
- 1 large egg
- 1 t vanilla
Preparation
Step 1
Preheat oven to 350'. Grease 8 muffin cups
Place 2t sugar in each cup. Add pineapple ring, trimming to ensure fit
Whisk flour, sugar, baking soda, baking powder, and salt in large bowl.
Whisk buttermilk, melted butter, egg, lime zest and vanilla in small bowl.
Pour wet mixture into dry ingredients, and whisk to combine.
Divide batter into muffin cups, filling to top. Tap pan on table top to get air bubbles out
Bake for 15-17 min until toothpick comes out clean
Cool cakes in pan 4-5 min, then run knife around sides and turn them out onto wire rack to cool. Makes 8 cakes
