Chocolate Diamonds Cookies

Ingredients

  • 1 square (1 ounce) unsweetened baking chocolate
  • 1/4 cup (1/2 stick) butter
  • 1/2 cup sugar
  • 1 egg
  • 1/4 cup all-purpose flour
  • 1/8 teaspoon salt
  • 1/4 teaspoon vanilla extract
  • 1/3 cup finely chopped walnuts

Preparation

Step 1

Preheat the oven to 400 degree F.

In a medium-sized saucepan, melt the chocolate and butter over low heat. Remove from the heat and add all the remaining ingredients except the nuts. Spread the mixture into a greased 8-inch square baking pan. Sprinkle with the walnuts and bake for about 12 minutes. Cool slightly, then cut into 1-1/4-inch diamond shapes. Cool completely before removing from the pan.

Makes about 2 dozen cookies.

Notes:
It's best not to substitute margarine for butter in this recipe.
