Gluten-Free Peanut Butter Cookies

Ingredients

  • 1 c. creamy peanut butter
  • 3/4 c. packed brown sugar
  • 2 large eggs
  • 1 tsp baking soda
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 2/3 c. gluten-free rolled oats
  • 2/3 c. candy-coated chocolate pieces or semisweet chocolate chips

Preparation

Step 1

Preheat oven to 350 degrees.

With an electric mixer, beat together peanut butter, brown sugar, eggs, baking soda, vanilla and salt until thoroughly mixed. Stir in oats and chocolate pieces. Drop by rounded tablespoons, 2 inches apart on parchment-lined or ungreased cookie sheets.

Bake for 9 to 11 minutes or until edges are golden. Cool 2 minutes on baking sheet; remove and cool on wire rack.
