Bubble and Squeak

Strange as this frugal British dish sounds, the name actually comes from the sounds it makes while cooking! A "true" Bubble and Squeak consists of only fried mashed potatoes and cabbage, but you don't have to stop there! Add in some cooked bacon, diced sausage, ham, or leftover roast and other leftover vegetables, if desired. It's frugal, delicious, and simple to make with almost no chance of failure and it's a great way for using up leftovers that you don't know what to do with.
Ingredients
- 2 2 2 cups cold leftover mashed potatoes (I made homemade the day before)
- 1 1 1 cup cooked cabbage*
- 1 2 1 2 1 - 2 tablespoons chopped onion, optional (I omitted)
- 2 2 2 tablespoons shredded carrot, optional (I omitted)
- 2 2 2 tablespoons butter or oil
- Dash Dash garlic salt (optional)
- to and pepper to taste
- Cooked bacon, ham, or other meat, cut into small pieces, optional (I served the ham on the side)
- 1 2 1 2 1 - 2 'sunny-side-up' fried eggs, optional
Preparation
Step 1
Melt 1/2 tablespoon of butter in a medium size non-stick skillet over medium-low/medium heat. Add the cabbage (and onion and carrot, if using) and saute for 5-6 minutes or until just tender and not browned, stirring frequently.
In a mixing bowl, add the cold mashed potato, cooked cabbage, seasonings to taste, and whatever add-ins you like; stir to combine. Wipe the same skillet clean with a paper towel then heat another tablespoon of oil or butter in it on a medium heat. Spoon the potato mixture into the skillet, patting it down to the bottom of the skillet. (This will help it stay together when you turn it over.) Pan fry for 5-6 minutes or until the bubble and squeak is well-browned on the bottom side.
Slide the bubble and squeak out of the skillet onto a plate then turn the skillet upside down over the plate and flip it over and back into the pan so that the cooked side is now on top. Continue to cook for another 4-5 minutes or until bottom side is well-browned. Slide onto a serving plate. Top with 1 or 2 'sunny-side-up' fried eggs, if desired, and serve immediately.
*(Note: The cabbage can also be par-boiled in a little water instead of pan cooking as directed.)
