Quick and Easy French Onion Soup

Ingredients
- 1/2 pound of fresh firm onions
- 1/4 coup of Butter
- 2 tablespoons of Oil
- 1 quart each of chicken and Beef broth
- 8 slices of French Bread
- Shredded Swiss and grated fresh parmasain cheese

Preparation
Step 1
Saute the onions in the melted butter and oil until transparent but not browned.
When tender turn the heat to the lowest setting, sprinkle with flour, and stir vigorously. Pour into a large pot and add the broths. heat well then pour into 8 individual oven proof bowls. Mix equal parts of the cheese and spread over the bread. Float a slice of cheesed bread on each bowl of soup.
Place all the bowls on oven rack about 4 inches from the top broiler.
Heat and broil until cheese is melted. Serve immediately.
This freezes well (up to 6 months) and you can alternate with different types of cheese
