Ingredients
- 1 lb pinto beans
- 1/2 lb smoked sausage (or 4 slices bacon or 1 ham hock)
- 1 onion, chopped
- 2 stalks celery, chopped
- 1 large red or green bell pepper, chopped
- 1 jalapeno, sliced in half
- 1 tablespoon garlic powder
- 4 sprigs fresh cilantro
- 1 tomato, chopped
- 1 tablespoon black pepper
- 1 tablespoon chili powder
- 1 tablespoon salt
- 1 teaspoon sugar

Step 1
1. Rinse beans thoroughly and drain. Place in pot with 4 quarts of water. Bring to a boil; add sausage, onion, celery, bell pepper, jalapeno, garlic, cilantro and tomato. Reduce to simmer and partially cover. When beans begin to soften (about 1 hour), add pepper, chili powder, sugar and salt. Cook until beans are tender and most liquid is absorbed, about 3 hours.
