Betty's Mint Meringues

Ingredients

  • 2 egg whites, room temperature
  • Pinch of salt
  • 3/4 c. ultrafine sugar
  • 1/2 t. cream of tartar, scant
  • 1/2 t. vanilla extract
  • 1/2 t. mint extract
  • 1-1/2 c. chocolate chips
  • 4 drops green food coloring

Preparation

Step 1

1. Beat egg whites until stiff on medium speed with dry beaters. Increase speed to high, and add salt, cream of tartar, and sugar gradually. Add flavorings and food coloring to beaten egg whites.
2. Carefully fold in chocolate chips. Drop by small spoonfuls on slightly greased heavy cookie sheets.
3. Preheat oven at 375F/190 C for 15 minutes. Turn off oven and immediately place cookies in oven. Leave 5 hours or overnight.
