New England Boiled Dinner

Ingredients

  • 3 to 3 1/2 lbs. corned beef brisket
  • 3 cups water
  • 1 medium onion, thinly sliced
  • 2 cloves garlic, minced
  • 2 bay leaves
  • 2 large potatoes cut up
  • 4 medium carrots, cut lengthwise
  • 1 medium head cabbage, cut in 6 wedges

Preparation

Step 1

In 3-qt. casserole place brisket with water. Slice onion over brisket and add garlic and bay leaves. Cover. Microwave at High (10) 15 Minutes. Turn brisket over. Recover. Microwave at Low (3) 1 Hour 50 minutes to 2 Hours, turning brisket over after 60 minutes. Remove meat from broth and keep warm.
Add potatoes and carrots to broth. Cover. Microwave at High (10) 15 Minutes.
Arrange cabbage in a pin-wheel on top of vegetables. Recover and continue microwaving 10 to 15 minutes, until vegetables are tender. Discard bay leaves to serve.
