Ingredients
- 1 box white or yellow cake mix
- 1/2 c unsweetened apple sauce
- 4 c. rhubarb, chopped
- 1 c. sugar
- 1 small carton (1/2 pt.) whipping cream

Step 1
Mix cake mix according to directions, substituting apple sauce for oil. Pour into greased 9 x 13 pan or 2 round pans . Mix rhubarb and sugar, then gently place over cake batter. Pour whipping cream over rhubarb and sugar mix.
Bake at 350°F for 45-60 minutes. Toothpick in center of cake will come out clean when cake is done. Remove from oven and let cool for 10-15 minutes. Invert onto a plate or cookie sheet covered with aluminum foil. Serve with whipped cream
